Dining
Our gastronomic proposal is based on the ‘km 0’ culture, which means most of the hotel’s suppliers are local farmers and ranchers. We based our cuisine on the local traditional slow food. The gastronomic space at Castilla Termal Monastery of Valbuena has an exclusive à-la-carte restaurant, ”Converso”, which suggests both traditional and modern cuisine, prepared with the highest quality local products of Ribera del Duero. The Hotel also has a cafeteria, ”La Cilla”, with lighted options which can be tasted on the Monks Cave, the old cave inside the Monastery. The Hotel has also its own kitchen garden from which our Chef and his team collect the seasonal vegetables for our guests.
Activities & Resort Facilities
Castilla Termal Monastery of Valbuena Hotel offers a varied range of tailored activities and excursions. Our guest relations manager and the team will support you in designing your activities while you are in Ribera del Duero. Some of the activities would be visiting any antique wine cave in the area, harvesting during the season, hot-air balloon traveling across the area vineyards, visiting the Castle of Peñafiel, visiting some traditional lamb, olive oil and cheese farms, biking close to the river and its natural area, birdwatching, etc.
We invite you not only to immerse yourself in the well-being of our waters but also in the customs and activities whose roots run deep in the region of the Ribera del Duero. With this aim in mind, we have put together a set of maps so that while you are staying here you will feel like you are one of the locals.
The Ribera del Duero stands out for its close ties to the world of wine, its customs, and its natural environment. Its people are deeply conscious of it, so if there is one thing you can experience in the surroundings of the Golden Mile of La Ribera, it is a unique wine tourism experience.
The first thing you must do is go for a walk among the vineyards of the region, then visit the wineries (bodegas) and taste their marvelous vintage red wines with the designation of origin Ribera del Duero.
Apart from the vineyards, water is the main feature of the area, hand in hand with the Douro River, so you can walk or cycle your way from San Bernardo, while you travel through its villages such as Valbuena de Duero and Quintanilla de Onésimo.
The local old towns have a special charm. A visit to Tudela de Duero is a must; you can taste and purchase its traditional asparagus in the various local shops and restaurants. Come to Peñafiel, take a walk by the Plaza del Coso and enjoy the spectacular views from the Castle.
Enjoying the local cuisine is a must in your visit, these are some of the things that must not be missed: garlic soup, a pincho of sucking lamb “al sarmiento” in the Traspinedo district and roast suckling lamb at our Restaurante Converso.
At the weekend, you mustn’t skip the hour of the vermouth, where you can try exquisite tapas in the local bars made in the traditional way with local products and combined with their best wines.
In our own facilities, you can get an insider’s sense of the area’s rural culture by visiting our organic garden with a gardener, touring the monastery’s historical premises, enjoying a group tasting in unique spaces such as the ”Bodega de los Monjes” (the Monks’ Winery), where the Cistercian monks, the fathers of the wines of the D.O. Ribera del Duero founded the vine-growing and wine-making culture of the region. In addition, during your stay with us, you can enjoy our “Vino Converso” wine, exclusively for our guests.
Depending on the time of year when you visit the Castilla Thermal Spa in the Monastery of Valbuena, you will be able to enjoy the traditional celebrations and festivals, in which the out-of-towners contribute all of their effort and enthusiasm, such as: Easter, the descent of the angel in Peñafiel, the Tudela Asparagus Festival, the festivals of the patron saints in summer (such as the Chundará folk festival in Peñafiel), the wine harvest festival, medieval markets and historical reenactments of the region.
